GENERAL TSOS CHICKEN RECIPE

This is really really really good! (serves about 8)

Ingredients
 --------------------------
3 lbs boneless skinless chicken breasts, cut into chunks
    2 cups green onions, sliced
8 small dried chilies, seeds removed (bird pepper or thai chilies are good)
  --------------------------
   Cornstarch slurry
1⁄4 cup soy sauce, low sodium preferred
    1 egg, beaten
    1 cup cornstarch
 --------------------------
   Sauce
    1⁄2 cup cornstarch
    1⁄4 cup water
1 1⁄2 teaspoons fresh garlic, minced
    3⁄4 cup sugar
    1⁄2 cup soy sauce
    1⁄4 cup white vinegar
1⁄4 cup sherry wine or 1⁄4 cup white wine
    14 1⁄2 ounces chicken broth (a can)

Directions

Place sauce ingredients in a quart jar with a lid and shake to mix. If you make this ahead of time just refrigerate until needed, shaking it again when you are ready to use it. This also keeps your dirty dishes down.

Mix cornstarch slurry in a large bowl- the mixture will be strange but trust me it works. It will be VERY thick almost paste like. Add ALL the chicken pieces and stir to coat. Using a fork remove ONE chicken piece at a time and let the excess mixture drip off. YES even though the mixture has a weird consistency it will not stick like paste and the excess will drip off. Add chicken to the hot (350 degree) oil and fry until crispy. Only cook 7 or 8 chicken pieces at a time. You do not want to lower the temp of the oil by cooking too many at a time. You can use a simple cooking or candy thermometer to judge the temp of the oil.

Drain on paper towels. Want them extra crispy? Put them on a rack over a sheet pan. Keep warm- I just put them in the oven with the oven off. Repeating until all chicken is fried.
In a separate wok or large skillet add a small amount of oil and heat to 400 degrees. Again, a candy thermometer works great. (Want less dishes? You can just drain the oil after you fry all the chicken, leave a small amount (about a tsp) in the pan and use the same pan if you like.)
Add green onions and hot peppers and stir fry about 30 seconds.

Stir (or shake jar) sauce mixture, and then add to pan with onions and peppers, cook until thick. Some reviews didn't kniw what "thick" meant. Thick like the same sauce you get at a restaurant.you want it to just coat the chicken. If it gets too thick, add a little water or other liquid. The thickness of the sauce should be similar to what you get when ordering this at a restaurant.
Add chicken to sauce in wok and heat just until the chicken is hot enough for you. It may not even need a minute if you kept the chicken warm. The quicker you serve it the crispier the chicken stays.

 WHAT IS THE MEDITERRANEAN DIET?
 WHAT IS THE MEDITERRANEAN DIET?

The Mediterranean diet (Mediterranean Diet) of recommendations food quite modern, currently considered to be one of the most health fever in the world are all studies to discuss and confirm its benefits, and named this name because key aspects of this diet includes eating large amounts of olive oil, cereals, fruits, vegetables, in addition to the consumption of large quantities of fish and other recommendations. But olive oil is considered a cornerstone in the feeding areas and around the Mediterranean, hence the name.
New study published in the British magazine for cancer (British Journal of cancer) says that a group of foods rich with antioxidants and fiber, and chemicals plant unsaturated fatty acids that can have a positive impact against the most common cancer in the female genital, where researchers have suggested that the commitment to try harder the Mediterranean, which is rich in these articles could reduce the risk of cancer in women Endometriosis more than half.
For the study, researchers examined diet meals for more than 5000 women from different regions, a total of 1,411 Women Cancer endometriosis, was compared with their meals with 3,668 patients in hospital suffering from acute diseases.
The researchers evaluate the commitment of women try harder the Mediterranean by dividing the Diet to nine different elements and measurement of women consume, these elements are:
  • The large quantities of vegetables
  • eating large amounts of fruits, nuts,
  • dealing with large quantities of pulses
  • with large quantities of cereals and potatoes

But women who ate less than five of the components of the Mediterranean diet did not less than their risk of cancer Endometriosis in any form

Butter versus marg

Butter versus marg

Are spreads any healthier than butter – and what’s in them?
BECAUSE BUTTER SEEMS a more natural product, with a shorter ingredients list, many people assume it’s the healthier choice. ‘Butter is made from milk fat, while margarine is derived from plant oils and fats,’ explains HFG nutritionist Amanda Ursell. But the main type of fat in butter is saturated and overall it contains far more fat than most spreads.

WHAT IS MARGARINE?

By law, a product labelled as margarine must have a similar fat content to butter and contain a minimum of 80% fat. Most of the products we see on the shelves these days are actually called spreads, so by law they can contain anything between 10% and 90% fat! In reality, most contain much less fat than you’d find in butter (typically 60% or less), and low-fat spreads can have as little as 19% fat. Some are also fortified with nutrients such as vitamins or cholesterol-lowering plant sterols. Check the labels for the percentage of fat, plus the amount of total fat and saturates in 1tsp – the amount you use on a slice of bread.
Spreads, on the other hand, may be manufactured and may contain preservatives, but they’re based on natural, monounsaturated and polyunsaturated oils, such as olive, sunflower or soya, which we commonly use in cooking.

Fighting cholesterol

‘Because they spread more easily than block butter, the average serving size is smaller, too,’ says Amanda. The vast majority of spreads in the UK are no longer made with the processed fats known as hydrogenated vegetable oils (HVOs) and therefore are free from artificial trans fat (but do check labels – look for the words ‘hydrogenated vegetable fats or oils’).
There’s no evidence that spreads are harmful – but there is evidence they can make a positive change to health when substituted for butter, for example by reducing blood cholesterol levels.

How to satisfy a sweet tooth and still lose weight

How to satisfy a sweet tooth and still lose weight
How to satisfy a sweet tooth and still lose weight

Keeping a check on those sweet cravings may not be as hard as you think. Try these tips…
THINK YOU CAN’T RESIST chocolate or cakes? Bear in mind that you’re more likely to indulge a sweet tooth if you’re hungry. So always eat three well-balanced meals, spread evenly, and have healthy ingredients, such as fruit, nuts or low-fat yogurt to snack on. Eating regularly keeps blood sugar levels topped up, preventing dips that send you racing for the biscuit tin. When you do decide to treat yourself, use these tricks to stop you going overboard.

Watch serving sizes

Often we just need a little taste to satisfy a craving, so don’t automatically reach for the standard-size version of your favourite sweet treat. Are you able to get it in a smaller size? Go for one scoop of ice cream rather than a double, or a treat-size bar of chocolate instead of the regular one.

Make a healthier swap

Sugary foods are often high in fat, so if you can’t resist, satisfy your sweet tooth with the food you fancy – but choose a lower-fat or lower-calorie variety. If you crave a creamy hot chocolate, choose a low-fat instant hot choc. And, instead of that handful of chocolates, have a few fat-free jelly beans.

Pick the seasonal best

It’s a lot easier to opt out of the office chocolate run if you keep a bowl of fruit on your desk – but it needs be at its best to be an appealing alternative to a biscuit. Fruit that’s in season tastes sweeter. Stock up on citrus fruits, apples and pears in autumn and winter, and in spring and summer choose delicious sweet berries and stone fruits, such as peaches and nectarines.

Let the sweet message sink in

After eating a satisfying main course, many of us will still end a meal with a pud – which may appeal but not suit any weight-loss plans. The key is to wait at least 15 minutes before having dessert to give your brain time to recognise your stomach is actually full. If then you still feel like something sweet, choose a low-fat treat such as fruit salad, sugar-free jelly, baked apples or lemon sorbet.

Don’t rush things

We often eat sweet food on the go – something we’ve picked up at the supermarket on the way home from work or a sweet drink gulped down as we’re walking. If you’re going to have a sweet treat, take the time to enjoy it: sit down, relax and eat it slowly, so you get maximum pleasure from it.

Brush your teeth

It’s one of the oldest tricks in the book, but when sugar cravings hit, get your toothbrush out. Toothpaste leaves a fresh, mint flavour in your mouth that actually spoils the flavour of classic sweet treats such as biscuits and confectionery.
Wait 15 minutes before having dessert to give your brain time to recognise your stomach is actually full

Long-term weight-loss solutions

Long-term weight-loss solutions
Long-term weight-loss solutions

It isn’t hard to shift the pounds in the short term, but keeping them off requires a long-term approach. Here’s how to make it work
FADDY AND CRASH diets do seem to work – at first. But as most of us can’t live on juices or starve ourselves two days a week for ever, we put the weight we’ve lost (and often more) back on as soon as we start eating normally again. That’s why it’s important to follow an eating plan that’s sustainable for life, and that means looking at the reasons we want to go on a diet in the first place.
‘Research shows successful weight loss is all about creating a healthy relationship with food and your body,’ says Healthy Food Guide expert Dr Dawn Harper. It may not be as quick or as dramatic as going on a diet, but making small, sustainable changes to what you eat and in how active you are is a far better approach to weight management.

Take anxiety out of the mix
Every time you fall off the diet wagon, then vow to diet again, you’re entering into a war with food and your body. To break the cycle, you’ll need a new, more straightforward attitude to food.

‘The most effective way to lose weight is to develop life-long healthy habits, rather than focusing on immediate weight loss,’ says HFG nutrition consultant Juliette Kellow. ‘If you can develop a healthy relationship with your body, food and exercise that doesn’t involve guilt and anxiety, you’ll be much more likely to achieve and maintain a healthy weight.’

Spell out your goals
‘If saying no to dieting sounds hard, a useful tool is to draw what’s called an ambivalence grid,’ says dietitian Lucy Jones. ‘Take an A4 piece of paper and divide it into four squares. Think about how your life might be in five years if you start a new way of life today – one that’s stable, maintainable and involves no more diets. In the top two boxes, write down the good and bad things about that (there’ll always be bad things, too, such as fear of the unknown or that it could all go wrong). Next, think of how life might be in five years’ time if you don’t break the diet cycle. Then, in the bottom two squares, write down the good and bad things about that.

Sometimes it can be hard to sort our thoughts out into a meaningful thread, so writing them down, evaluating the pros and cons and thinking about how you want your life to be can help you focus and get on to the path to a healthier way of life.

3 tips to get you started

1. Be food literate No more subscribing to faddy diets or dubious advice from unqualified sources. If you want to separate what’s healthy from what’s not, look to government-approved websites, such as nhs.uk/livewell/goodfood, advice from the British Nutrition Foundation and the features and recipes in Healthy Food Guide every month.
2. Set achievable targets ‘Lose weight’ and ‘get fit’ are non-specific targets– who decides when you’ve achieved them? Instead, set short-term goals that are realistic, such as ‘exercise for 10 minutes every morning’ or ‘try one new vegetable a week’.
3. Write it down Studies have shown that people who log what they eat tend to lose more weight. Use Facebook and Twitter to record your habits, try apps such as MyFitnessPal (free on iTunes) to record your food intake and energy expenditure – or grab an old-fashioned pen and paper.

Ham Fried Rice

Ham Fried Rice

Ham Fried Rice
Ham Fried Rice

Last Fall when John and I were on our road trip up the Pacific Coast Highway, we had Chinese takeout for dinner one night. We actually found a restaurant that was willing to deliver to the motel. Score! My expectations for a quality meal were quite low, but beggars can’t be choosers.
I have a personal taste preference barometer that I use to measure the quality of a Mexican or Chinese restaurant. I call it my rice barometer. If the rice at a given restaurant tastes good, then chances are high that the rest of the food will taste good also. It works for me every time.

Ham Fried Rice When the Chinese food arrived at our motel room, I went after the fried rice first and did a double take as the flavors hit my tongue. I literally stared at the rice in the takeout carton as if someone was playing a trick on me.

Never, ever, has Chinese fried rice tasted as good as the rice I was eating at that moment. The flavor was deep and rich and completely undefinable. There was a hint of something that reminded me of sitting around a campfire at night in a quiet forest. It was so delicious!
My rice barometer held true for the rest of the meal, too. Everything I ate was the best of any Chinese food that I had ever eaten. The only sad things about eating that meal were realizing that 1) We would be leaving the next morning and I would never be able to order from the restaurant again, and 2) The probability of me ever being able to reproduce that meal at home was pretty darn low.Ham Fried Rice I’ve been in deep, ham fried rice mourning since October. It’s ridiculous. It’s just rice, for heaven’s sake! I’ve been making fried rice since…well…let’s see…since I found a recipe 30 years ago on the back of a package of rice. Oh, but that recipe is no longer in service. It’s kingdom has been overthrown because I’m wearing my big girl panties now. I have learned that there’s more to Chinese flavors than soy sauce.
In this rice I replace traditional soy sauce with hoisin, sesame seed oil and oyster sauce. Joo gonna love it, baby!Ham Fried Rice
Ham Fried Rice
Prep Time: 15 minutesCook Time: 10 minutesTotal Time: 25 minutesYield: 4-6 servingsThis delicious ham fried rice is flavored with oyster sauce, sesame seed oil and hoisin sauce. This is a great way to use up leftover rice.
Ingredients
  • 3 tablespoons oyster sauce
  • 1 tablespoon sesame seed oil
  • 2 teaspoons hoisin sauce
  • 2 tablespoons peanut oil
  • 1 cup yellow onion, small dice
  • 2 medium carrots, diced
  • 3/4 cup diced ham (I used a small portion of a ham steak)
  • 3 cloves fresh garlic, minced
  • 1/2 cup frozen green peas
  • 2 eggs, lightly beaten
  • 4 cups cold, cooked brown jasmine rice (white rice is also fine)Please see "Notes" below.
Instructions
  1. In a small bowl, mix together the oyster sauce, sesame seed oil, and hoisin sauce. Set aside.
  1. Break up cold rice with a spoon, spatula, or your clean hands. Set rice aside.
  1. Heat a wok pan to hot over high heat. Carefully add the peanut oil and tilt wok so that the oil covers the interior sides and bottom of the wok.
  1. Add the onions, carrots and ham. Quickly stir fry for 2 minutes.Lower heat a little if necessary. Add the garlic and continue to stir fry for an additional minute. Add the frozen peas and stir to distribute evenly.
  1. Pour the beaten eggs over the vegetable and ham mixture. Stir fry ingredients just until eggs are set. Add the rice and continue to stir fry until rice is heated through.
  1. Pour the sauce mixture over the rice mixture. Stir fry until the sauce mixture is evenly distributed and rice is hot.
  1. Serve immediately. Some guests may want to add additional sauces or oils. Suggested: soy sauce, oyster sauce, or sesame seed oil. Additional hoisin sauce may not work well because it is sweet.

Notes
Freshly cooked rice does not hold up well when using for fried rice. For the best outcome, the rice should be prepared a day in advance and refrigerated. Just prior to using for fried rice, remove from refrigerator and break up rice clumps with a spoon, spatula, or your clean hands.
Substitutions. The ham can be replaced with chicken or shrimp.
Recipe by Terri @ that's some good cookin'Ham Fried RiceWell, this looks just like a Caribbean cruise! I love the color of this cutting board. Look how it makes those orange carrots pop! The ham looks a little questionable, but the carrots–WOW!Ham Fried Rice This is brown Jasmine rice. Jasmine is a wonderful aromatic rice and works so well with Asian cuisine. Whatever kind of rice you use, be sure that it has spent some time chilling in the refrigerator before you use it to make fried rice. Freshly made rice will turn mushy when used in making fried rice. Don’t let mush happen to you; use day old, cold rice! Oh, I almost forgot to tell you. Break up the rice after it comes out of the fridge. Use a spoon, spatula, or even your clean hands. Note: Hands work really well.Ham Fried RiceTurn a burner up to high and heat up a wok or wok pan until it is quite hot (not smoking hot…smoking hot scares me because of the fire hazard). Add the oil to the wok and swirl the wok so that the oil coats the inside. There is not a picture of me swirling the oil around the wok because there is no way I was going to swirl hot oil in a hot wok and try to take a picture of that process at the same time. Add the onions, carrots and ham to the wok and stir fry for a minute or two; then add the garlic and stir fry for another minute.Ham Fried RiceAdd the peas. Frozen is fine. They defrost and cook to the perfect stage of perfectness in a wink.Ham Fried RicePour the beaten eggs over the vegetables and ham.Ham Fried RiceStir things around a lot.Ham Fried RiceKeep stirring. The egg is cooking, so don’t stop stirring.Ham Fried RiceOkay, stop. The egg should still look moist. Don’t cook it until it looks like the Mojave. It you do overcook it, nothing bad will happen, probably.Ham Fried RiceNow it is time for the rice. Dump it in the wok on top of all of the other good stuff. Look how that rice is just falling out of the bowl. It reminds me of kids jumping on the bed or dog piling while I’m sitting on the bed trying to type something on the computer. Yeah. I don’t want to ever have to take one of those Rorschach tests. “Terri? What does this picture remind you of?” “Umm…that one looks like an 18 month old smashing eggs on the kitchen floor one by one.” “And this one?”

“Wellll…that one looks like a 4 year old filling up the exhaust pipe to the furnace with mud.” “I see. How about this one?” “Oh. Well. That one looks like new bedroom carpet painted with Desitin.” “Very interesting answers, Terri. Let’s try one more. Tell me about this picture.” “Ha! That’s easy. That one looks like some old lady getting conned by a kid with big brown, puppy-dog eyes into making 192 cookies to fill up a ‘rwilly big box’.”Ham Fried RiceWhen you’re done with your Rorschach test, quickly stir everything together.Ham Fried RiceThis is the best part. Add the mixture of oyster sauce, hoisin and sesame seed oil. So exciting.Ham Fried RiceStir well, but not too vigorously, to evenly distribute the sauce. Continue stirring until the rice is hot. Serve immediately. Or right away. Or while it is still warm. Or sometime within two hours of cooking. Food safety rules apply. 😉Ham Fried Rice
