This is really really really good! (serves about 8)

Ingredients
 --------------------------
    3 lbs boneless skinless chicken breasts, cut into chunks
    2 cups green onions, sliced
    8 small dried chilies, seeds removed (bird pepper or thai chilies are good)
  --------------------------
   Cornstarch slurry
    1⁄4 cup soy sauce, low sodium preferred
    1 egg, beaten
    1 cup cornstarch
 --------------------------
   Sauce
    1⁄2 cup cornstarch
    1⁄4 cup water
    1 1⁄2 teaspoons fresh garlic, minced
    3⁄4 cup sugar
    1⁄2 cup soy sauce
    1⁄4 cup white vinegar
    1⁄4 cup sherry wine or 1⁄4 cup white wine
    14 1⁄2 ounces chicken broth (a can)

Directions

    Place sauce ingredients in a quart jar with a lid and shake to mix. If you make this ahead of time just refrigerate until needed, shaking it again when you are ready to use it. This also keeps your dirty dishes down.

    Mix cornstarch slurry in a large bowl- the mixture will be strange but trust me it works. It will be VERY thick almost paste like. Add ALL the chicken pieces and stir to coat. Using a fork remove ONE chicken piece at a time and let the excess mixture drip off. YES even though the mixture has a weird consistency it will not stick like paste and the excess will drip off. Add chicken to the hot (350 degree) oil and fry until crispy. Only cook 7 or 8 chicken pieces at a time. You do not want to lower the temp of the oil by cooking too many at a time. You can use a simple cooking or candy thermometer to judge the temp of the oil.

    Drain on paper towels. Want them extra crispy? Put them on a rack over a sheet pan. Keep warm- I just put them in the oven with the oven off. Repeating until all chicken is fried.
    In a separate wok or large skillet add a small amount of oil and heat to 400 degrees. Again, a candy thermometer works great. (Want less dishes? You can just drain the oil after you fry all the chicken, leave a small amount (about a tsp) in the pan and use the same pan if you like.)
    Add green onions and hot peppers and stir fry about 30 seconds.

    Stir (or shake jar) sauce mixture, and then add to pan with onions and peppers, cook until thick. Some reviews didn't kniw what "thick" meant. Thick like the same sauce you get at a restaurant.you want it to just coat the chicken. If it gets too thick, add a little water or other liquid. The thickness of the sauce should be similar to what you get when ordering this at a restaurant.
    Add chicken to sauce in wok and heat just until the chicken is hot enough for you. It may not even need a minute if you kept the chicken warm. The quicker you serve it the crispier the chicken stays.

Are spreads any healthier than butter – and what’s in them?
BECAUSE BUTTER SEEMS a more natural product, with a shorter ingredients list, many people assume it’s the healthier choice. ‘Butter is made from milk fat, while margarine is derived from plant oils and fats,’ explains HFG nutritionist Amanda Ursell. But the main type of fat in butter is saturated and overall it contains far more fat than most spreads.

WHAT IS MARGARINE?


By law, a product labelled as margarine must have a similar fat content to butter and contain a minimum of 80% fat. Most of the products we see on the shelves these days are actually called spreads, so by law they can contain anything between 10% and 90% fat! In reality, most contain much less fat than you’d find in butter (typically 60% or less), and low-fat spreads can have as little as 19% fat. Some are also fortified with nutrients such as vitamins or cholesterol-lowering plant sterols. Check the labels for the percentage of fat, plus the amount of total fat and saturates in 1tsp – the amount you use on a slice of bread.
Spreads, on the other hand, may be manufactured and may contain preservatives, but they’re based on natural, monounsaturated and polyunsaturated oils, such as olive, sunflower or soya, which we commonly use in cooking.

Fighting cholesterol

‘Because they spread more easily than block butter, the average serving size is smaller, too,’ says Amanda. The vast majority of spreads in the UK are no longer made with the processed fats known as hydrogenated vegetable oils (HVOs) and therefore are free from artificial trans fat (but do check labels – look for the words ‘hydrogenated vegetable fats or oils’).
There’s no evidence that spreads are harmful – but there is evidence they can make a positive change to health when substituted for butter, for example by reducing blood cholesterol levels.

- 1 box funfetti cake mix (DO NOT add the ingredients that you usually would to actually make the cake - you need just the mix)
- 2 cups plain yogurt
- 1/2 container of cool whip.

Directions:

In a large bowl, mix together cake mix, plain yogurt and Cool Whip until completely combined and you see no more lumps. Cover with plastic wrap and allow to chill for about 4 hours.

Garnish with additional sprinkles if desired and serve with animal crackers or Teddy Grahams.

Ingredients

650g floury potatoes, cut into wedges
100g green beans, cut diagonally
200g cherry tomatoes, halved
100g reduced-fat feta, crumbled
250g iceberg or cos lettuce leaves, torn
2tbsp low-fat salad dressing
Cooking oil spray
4 x 150g firm white fish fillets


Method
Cook the potatoes in a large pan of boiling water for 6–8 min until almost tender, then drain.
Meanwhile, steam the green beans for 1–2 min until just tender. Refresh them in a bowl of cold water, then drain. Combine the beans, tomatoes, feta, lettuce and dressing in a medium bowl.
Spray a frying pan with a little oil and put over a medium-high heat. Fry the drained potato wedges for 7–8 min until browned and crisp.
Meanwhile, spray a separate frying pan with a little more oil and put over a medium heat. Cook the fish for 5–6 min, turning once, until just cooked through. Season with ground black pepper, then serve with the wedges and the salad.

Who’s missing out?

Intakes of this mineral are a problem for many groups, especially children and menstruating women – 8% of 18-month to three-year-olds, 5% of teenage boys, 44% of teenage girls and 22% of women have exceptionally low intakes.

Important for

Making red blood cells, which carry oxygen around the body. Insufficient amounts can result in anaemia.

Find it in

Liver, lean red meat, shellfish, eggs, fortified cereals, beans, lentils, nuts, seeds, dried fruit and dark green leafy veg.

Boost your intake

  • Enjoy small portions of lean red meat – the darker the meat, the more iron it has (eat beef or lamb).
  • Go for the dark meat of chicken – it has double the amount of iron.
  • Enjoy liver occasionally if you’re not pregnant or planning a pregnancy (see vitamin A).
  • Swap cheese sandwiches for eggs or mash egg with light mayo to top a jacket potato.
  • Snack on a hard-boiled egg.
  • Choose fortified cereals, – look for those with the most iron.
  • Have baked beans on toast for lunch – choose tins that are lower in sugar and salt.
  • Eating out? Order mussels, cockles, clams, crayfish or brown crabmeat – all contain iron.
  • Add a handful of cashew nuts to stir-fries – they contain the most iron of all nuts. Or sprinkle with iron-rich sesame seeds.
  • Vitamin C helps the body to absorb iron from non-meat foods, so team foods rich in this vitamin with iron-rich foods. Good choices include citrus fruits and juices, berries and tomatoes.
